Peanut Curry Chopped Grain Bowl
Components for 4 servings
  • 1 cup black rice (or your grain of alternative)
  • 1/2 head medium cabbage (napa cabbage or purple most well-liked), chopped
  • 3 cups chard, chopped
  • 1 giant carrot, julienne or chopped
  • 1 purple bell pepper, chopped
  • 1 mango, diced
  • 3 inexperienced onions, diced
  • Dressing
    • 1/3 cup lite coconut milk
    • 3 tablespoons powdered peanut butter (or actual peanut butter)
    • 1 tablespoon (Madras) curry powder
    • 1 garlic clove, minced

    • 1 tablespoon low sodium soy sauce or tamari (or to style)
    • 1 tablespoon white vinegar (non-compulsory)
    • 1 tablespoon coconut sugar (non-compulsory)
  • Garnish
Steps

  1. Prepare dinner grains based on the directions given after which put aside to chill.
