Tater Tot Breakfast Casserole

Ingredients Ingredients for 4 hearty servings: spray olive oil 3/4 cup chopped (red) bell pepper 1/3 cup diced red onion 12oz 93% lean ground turkey Seasonings: 1/2 tablespoon garlic powder 1/2 tablespoon onion powder 2 teaspoons oregano 1 teaspoon sage 4 whole eggs 5 egg whites 2 cups raw spinach 1 cup reduced fat cheddar cheese 32 veggie cauliflower tots
Steps Set oven to 420F. Spray a nonstick skillet with olive oil and set on medium-high heat.  Sauté red onion and bell pepper for 3 to 5 minutes, until the onion is brown and translucent. Add the ground turkey.  Chop and cook it up in the skillet using a wooden or rubber spatula.  While it cooks, add in the seasonings and a pinch of sea salt & pepper.  Cook until the turkey is no longer visibly pink, about 5 to 7 minutes.  Set aside. Beat eggs and egg whites together in a bowl.
